Cheese, Tomato & Oat Flapjacks

 

Ingredients

  • 150g  jumbo oats
  • 50g  mature cheese, grated e.g. Cheddar
  • 75g  sun dried tomatoes, chopped
  • 2  medium eggs, beaten
  • 1tbsp  rapeseed oil
  • 25g  mixed seeds

A savoury version of a traditional favourite, which can be made in advance and enjoyed at your leisure. These flapjacks contain just 2g of saturated fat per serving.

5 minutes to prepare  and  15 minutes to cook.

Instructions

  1. Preheat the oven to 200°C, gas mark 6.
  2. Grease and line the base of a 22cm square tin with baking parchment.
  3. Mix all the ingredients together and press into the tin.
  4. Bake for 12-15 minutes.
  5. Cool slightly then cut into 12 slices.
  6. Cool completely before removing from the tin.

Cook's tips:

Store in an air-tight container for 2-3 days.

Also ideal for freezing.
